Patsy Catsos, the author of The IBS Elimination Diet and Cookbook, has developed hundreds of low-FODMAP recipes for publication in her own books, and for various clients. Patsy approaches recipe development with the practical eye of a life-long baker and cook. 

Patsy has a creative and flexible recipe development process, using and substituting ingredients based on their function and flavor. She carefully selects alternatives to high-FODMAP ingredients in standard recipes, focusing on flavors, aromas, and textures that work well for people with irritable bowel syndrome (IBS) and other gastrointestinal conditions. As a registered dietitian nutritionist and a foremost expert in IBS and FODMAPs, Patsy designs recipes such that one serving of each is suitable for a low-FODMAP diet. 

Our recipes undergo multiple rounds of ingredient sourcing, testing and editing to assure that they are clearly written, accurate, affordable, and minimize pots, pans, and clean-up. We calculate the nutrient composition of our recipes using Chronometer. Early in her career, Patsy was a nutrient database manager at Tufts New England Medical Center, so she competently customizes the database for use with low-FODMAP recipes as needed.

Lisa Rothstein, co-author of IBS-Free Recipes for the Whole Family, is another important member of the GI Nutrition Inc recipe development team. Lisa is a creative and prolific recipe developer who achieves excellence on both the technical aspects and flavor profiles of her recipes. She was particularly involved in GI Nutrition Inc's 2017 recipe development project for VeryWell.com.

Basic food styling and photography are available. Patsy shoots with a Canon EOS Rebel T6 camera with a high quality Canon prime lens, in natural light whenever possible, using a variety of home-style props. She enjoys collecting textiles, serving pieces, cookware, dishware and cutlery that will contribute to interesting compositions while showcasing the colors and textures of the food.
